I’ve tasted GreedFed Cheese from Beyond Organic, and their cheese is beyond delicious! I’m a huge fan of cheese in general, but this raw cheese was AMBROSIAL.
So what exactly is so great about Beyond Organic’s dairy? Let me count the ways…
GreenFed cow milk is used to produce raw milk for these cheeses. What is a GreedFed cow exactly, you ask? They roam free on certified organic pasture, grazing on their natural diet of [organic] grasses, legumes, forbs and herbs. They’re never fed grain or GMO’s and antibiotics and hormones are never used on them!
Beyond Organic only uses unpasteurized, untreated, true whole milk to make their cheese that is never heated above the cow’s body temperature (around 101.5 degrees), which makes it Really Raw. As a side note, there are many cheeses labeled “raw”. Legally cheese makers are allowed to heat the milk to just under pasteurization temperature (180 degrees), and continue to call it “raw”. This is a HUGE difference in temperature!
Why does any of this matter? Keeping dairy closer to its natural state allows there to be more enzymes to help digestion, more probiotics, proteins and healthy fat. Enzymes help digestion and absorption. Probiotics promote a healthy gut and combat toxins, candida, fatigue & weight gain just to name a few benefits! Not skimming the fat gives a nice balance of protein (7 grams) and fat-soluble vitamins like A,D,K and E, which our country is now becoming more deficient in.

Normally, I personally feel a little fatigued or bloated after eating cheese and with Beyond Organic Really Raw cheeses, I don’t. I believe its most likely due to all of the enzymes and probiotics. It’s SO rich, even just a little nibble is satisfying! It’s great sliced, melted or toasted and the probiotics used are heat resistant, which means you don’t lose their benefits by heating the cheese!
Aside from super yum, this cheese is super nutritious. It’s a natural source of Omega-3s and CLA. Its artisanal, which means old world, hand crafted processing and in another rarity is made on the same farm where the cow is milked! Who knew??!!
